Christmas places enormous operational pressure on London restaurants. Festive parties, private dining, longer opening hours and higher guest numbers all increase demands on commercial kitchens, washrooms, floors and front-of-house presentation. This restaurant cleaning checklist covers what to review before peak service begins.
Casna Group has provided cleaning and operational support to London’s luxury hospitality sector for over 37 years, with around 500 staff across over 100 sites.
Casna provides night kitchen cleaning, stewarding and kitchen porters for London restaurants and food halls, including high-volume sites trading seven days a week. Our wider portfolio includes five-star hotels on Park Lane, in Mayfair and Knightsbridge, a landmark residential tower on the South Bank, and major London restaurant and food-hall operators.
November is the time to assess readiness for peak festive service.
1. Match cleaning rotas to December bookings
Review forecast covers, private dining, group events, late closing, busy weekends and New Year’s Eve. A fully booked festive evening should not automatically have the same cleaning and stewarding rota as a normal trading day.
2. Plan additional kitchen porters and stewards
High-volume service means more plates, pans, glassware, deliveries, waste and equipment use. If pot wash, dishwashing or waste movement falls behind, kitchen operations can quickly be affected. Decide which dates need extra stewarding or kitchen porter cover before December begins.
3. Arrange festive surge cover early
Because Casna staff are employed centrally, we can provide extra kitchen porters, stewards and washroom attendants for peak December dates at [CONFIRM NUMBER] days’ notice, subject to the agreed service terms and availability.
Booking deadline: Book additional festive cover by [CONFIRM DATE] to guarantee availability.
For high-demand evenings, the earlier staffing is planned, the easier it is to match the right vetted and trained employees to the role.
4. Inspect commercial kitchen cleaning requirements
Before the busiest trading period, check cooking equipment, preparation stations, floor edges, walls, accessible overhead areas, refrigeration, waste storage, drains and accessible extraction components.
Where accumulated grease or dirt requires deeper treatment, arrange it before the peak rather than disrupting December service. Specialist extraction and ductwork cleaning should be assigned to appropriately competent specialists.
5. Review the overnight cleaning window
Extended trading hours can reduce the time available to complete the same cleaning workload. Ask whether shifts should move, whether additional operatives are required and which tasks must be completed before reopening.
Front-of-house and back-of-house night cleaning are core Casna services, alongside stewarding and kitchen porter support.
6. Increase washroom checks during events
Heavy guest traffic can require more frequent checks of toilets, basins, mirrors, floors, touchpoints, bins and consumables. Consider a dedicated attendant at high-volume events rather than relying on a single pre-opening clean.
7. Protect entrances and premium flooring
December rain and grit can be particularly damaging to marble, terrazzo and other delicate finishes. Review matting, inspection frequency, safe cleaning products and whether specialist natural stone maintenance is needed.
8. Plan separately for Christmas parties
Map event guest numbers, arrival and departure times, bar usage, private dining areas, porter demand, washroom usage and the post-event clean. Normal closing routines may not be adequate after a large function.
9. Keep guest-facing areas presentable all evening
Inspect entrances, waiting areas, tables, glass, mirrors, bars, handrails, door handles and floors during service. The standard at 10pm should reflect the same attention to detail shown before opening.
10. Agree escalation and staffing approvals
Make sure duty managers know who can authorise extra cover, who is responsible for the night team and whom to contact if unexpected staffing or cleaning issues arise.

Give cleaning teams the same forecast as the kitchen
Restaurants routinely forecast covers for food purchasing, chefs and front-of-house staffing. Cleaning and stewarding should receive the same information. It is easier to plan trained support before a busy Saturday than to source it midway through service.
